Dandy Bubbles Returns!
Join us at the Rooftop Lounge at Poeta as we celebrate the release of the 2025 Dandy Bubbles alongside three new vineyard-designate wines from the 2025 vintage.
Chef Ian from Poeta Restaurant has created a menu of thoughtfully paired bites designed to complement each wine in the release. Founder and Head Winemaker Rae Wilson will be there to share the stories behind the wines, the vineyards, and the vintage.
Following the tasting, guests are invited to continue the afternoon poolside with complimentary access to East Austin Hotel’s rooftop pool, where Dandy Bubbles will be available for purchase by the glass and bottle.

Ticket includes a tasting of all four release wines, paired bites from Poeta, and pool access following the event.

2025 Dandy Bubbles
The wine that inspired this celebration. Dandy Bubbles continues its tradition of bright fruit, vibrant acidity, and bottle-fermented character. Previous vintages have shown notes of white nectarine, melon, white cherry, and delicate mineral undertones.
2025 Grenache, Uplift Vineyard
A highly anticipated release from one of Texas’ most distinctive vineyard sites. Previous vintages have shown lifted aromatics, cherry liqueur, dried spice, and remarkable elegance from the granite and limestone soils of Uplift Vineyard. For this event, an exclusive special release price of $58 per bottle will be offered, with Member discounts still applying. Following the Summer Release period, the bottle will move to its standard retail pricing.
2025 Chenin Blanc, Dell Valley Vineyard
One of Rae Wilson’s favorite varieties, Chenin Blanc continues to thrive in the rugged landscape of Dell Valley Vineyard. This vintage balances freshness and texture with remarkable concentration, offering a wine that feels both vibrant and deeply rooted in place.
2025 Sauvignon Blanc, Boxing Rabbit Vineyard
Sourced from one of the oldest continuously operating vineyards in Texas. Previous vintages have displayed vibrant acidity, citrus, stone fruit, and remarkable depth from these historic vines.
